Hooray! Sap!

Finally noticed some good flow from a broken branch today. Tapped my first three trees. Taste is already a little buddish. Hope I didn't wait too long.

Nah, you're still good. As I type this I am boiling down 20 gallons. Already we have done 17-18. Have netted about 4 pints. Anticipate being in business for another couple weeks... 6 weeks from tapping. Thanks for the inspiration last year!

Congrats. Would like to try your syrup over some flapjacks this summer. Maybe just some old johnny cakes instead.

When did you start? I kept waiting for that magic "freezing at night mid forties during the day" but we just weren't staying there for more than a day or so. Guess I'll not wait so long next year.

How many trees have you tapped to get that much? I'll have to come out and see your operation.

Stop by anytime... Princess would love to renew auld aquaintances.

I have only tapped 3 trees. However, two of the trees are very large (3 taps apiece). They have produced 5 gallons in one 24 hour period (per). We counted up 9 pints tonight, which equals about 35 gallons of sap.
Mmmm good.
This is one hobby that I can really get into because it is so seasonal. The rest of the year you look forward to it like that vacation when you were ten.

I take it that "buddish" is not a desirable flavor?

In small amounts, it's what gives the "mapley" flavor. As it increases, it makes the syrup bitter. Got a be a sermon illustration in there somewhere.
